Simple Vegetable Soup
This simple vegetable soup is a family recipe that has been passed down, but never written down. It has been highly requested, but there are some ingredients I cannot give you quantities for as I just know by looking if it's the right amount. All I can say is that you need to experiment and the add seasonings to your taste. However, I will do my best to tell you what to look for.
Ingredients:
- 1 lb. of Hamburger
- 1 Bag of Frozen Vegetables - corn, carrot, green bean, pea mixture
- 1 Baking Potato or two small potatoes
- 1 Can or Bottle (32 oz) Tomato Juice
- Shredded Cabbage (if on hand)
- Garlic Powder
- Onion Powder
- Salt
- Pepper
Heat dutch oven and add hamburger. While hamburger is browning, add the following spices:
Dash or two of salt
Pepper (enough to just cover the top of the hamburger)
Garlic Powder (enough to cover the hamburger)
Onion Powder (enough to cover the hamburger)
Mix well and continue cooking until hamburger is browned. It seems like a lot of seasoning, but it will be enough to season the whole soup when all of the other ingredients are added.
Drain grease from the hamburger and return to pot. Add the bag of frozen veggies and stir. If you have cabbage on hand that you need to get rid of, use a knife and cut 5-6 shreds from the head and add to the pot. If you don't have any, don't worry about adding it.
Go ahead and add the tomato juice and bring to a boil. Peel the potato and cut into chunks. Add potato to the pot. Reduce heat to med-low and simmer for at least one hour, if not longer to give the flavors time to blend.
Serve with crackers - either added to the bowl with the soup or on the side.
Cool and refrigerate or freeze leftovers. Hint: This soup is great fresh, but even better re-heated the next day so it can be made ahead.
