Chastity, did you soften the cream cheese first? If I forget to let it sit out to soften, I will soften mine in the microwave. 30-40 seconds usually does the trick. If it is left too hard, then yes, it hard to mix as well as spread. Otherwise, I've never had a problem.

I've never had a problem with the vanilla pudding and vanilla extract discoloring to a yellow color when I made this. I'm sorry that it happened to you though. Glad it still tasted ok in the end.

@Joe, yes, you leave the cream in the Oreo cookies. :-)

The cream cheese mixture was thick and hard to spread, and the vanilla pudding and vanilla extract was a yellow color and therefore didn't look too good on top of the cream cheese mixture. Overall it tasted great, just didn't look very good.

I'm sorry, but making the pudding is in the directions of the recipe. Right where it says "Mix milk, pudding and vanilla". Just give it a few minutes to set and pour it over the contents in the pan. :)

Family favorite! I do not use extract in mine. I have left out the powered sugar before or put less.
