If I forget to let it sit out to soften, I will soften mine in the microwave. 30-40 seconds usually does the trick. If it is left too hard, then yes, it hard to mix as well as spread. Otherwise, I've never had a problem. I've never had a problem with the vanilla pudding and vanilla extract discoloring to a yellow color when I made this. I'm sorry that it happened to you though.
