Grilled Fiesta Chicken Sandwich

This Fiesta Chicken Sandwich is bursting with flavor and very filling. I came across a basic recipe and added my own touch to it to create this hearty treat. Give it a try, you won't be sorry!

Ingredients:

2 Boneless Skinless Chicken Breasts

Mrs. Dash to taste (optional)

2 Tbsp of Taco Sauce

2 Tbsp of Honey

2 Tbsp of Mayonnaise or Miracle Whip

2 Slices of Monterrey Jack Cheese

1 Can of Sliced Pineapple

A few leaves of Romaine or Head Lettuce

2 Hamburger Buns

Pre-heat your outdoor grill for cooking. You can substitute a George Foreman grill, but it is best prepared over gas or charcoal. Mix together the taco sauce and honey. Then mix 2 teaspoons of the mixture with the mayonnaise or Miracle Whip. Sprinkle Mrs. Dash liberally over the chicken breasts and coat with a thin layer of the taco sauce/honey mixture. Place on the grill. After about 5 minutes, flip the chicken and place 2 pineapple slices on the grill. Flip pineapple slices after 2 or 3 minutes. Baste chicken with taco sauce/honey mixture during cooking. At close to the point where the chicken is tender and done, place pineapple slices on top of the chicken and one slice of Monterrey Jack cheese on top of it all to melt. Once the cheese has melted, remove from grill. Coat both sides of the buns with mayonnaise mixture, place chicken on the bun and top with lettuce. Serve with your choice of side.

As a side note, the chicken also makes a good main dish by itself. You can serve it with rice, salad or anything else you can imagine for a main course dinner. Hope you enjoy it!
